Some margaritas show up ready to party. Others show up with nowhere to be.

The Coconut Drift Rita falls squarely into the second category.

June is that sweet spot where summer is officially underway, the days are stretching longer, and the calendar starts looking a little less important. This month’s Margarita of the Month embraces that energy completely.

Made with coconut water, lime, tequila, and a splash of pineapple, the Coconut Drift Rita is light, refreshing, and built for slow afternoons by the water. It’s the kind of drink that doesn’t rush you anywhere. In fact, it encourages exactly the opposite.

Much like this month’s blog, Docktails, Daydreams, and Doing Absolutely Nothing, this margarita celebrates the fine art of slowing down and appreciating the moment. Because not every day needs an agenda. Sometimes all you need is a comfortable chair, a view of the water, and something cold in your hand.

Coconut Drift Rita Recipe

Serves: 2 Parrotheads or one who’s intentionally off the clock.

Ingredients

2 oz silver tequila

1 oz triple sec or orange liqueur

2 oz coconut water

1 oz pineapple juice

1 oz fresh lime juice

½ oz agave syrup (optional)

Ice

For the Rim

Lime wedge

Toasted coconut flakes mixed with coarse sugar

Instructions

  1. Run a lime wedge around the rim of your glass and give it a proper coating of the toasted coconut and sugar mixture. Don’t be shy, this isn’t a diet garnish.
  2. Add tequila, triple sec, coconut water, pineapple juice, lime juice, agave, and ice to a shaker.
  3. Shake it like you’re trying to drown out a Jimmy Buffett song playing on the next boat over.
  4. Strain into your prepared glass filled with fresh ice.
  5. Garnish with pineapple, lime, and a sprinkle of toasted coconut, or go full Parrothead and add enough to make the blender nervous.
  6. Find the nearest dock, boat, beach, patio, or body of water and proceed responsibly. Extra points if you completely lose track of what day it is.

Why We Love It

The Coconut Drift Rita isn’t flashy. It isn’t trying to be the loudest drink on the menu. It’s easygoing, refreshing, and comfortable in its own skin. Kind of like your favorite beach chair.

The coconut water keeps things light and crisp, while the pineapple and lime bring just enough tropical flavor to remind you that summer has officially arrived.

Parrothead Pairing Suggestions

Soundtrack: “Son of a Son of a Sailor” or any song best enjoyed with a horizon in view

Snack: Fresh fruit, grilled shrimp, or whatever’s easiest to grab without leaving your chair

Location: A dock, a boat, a beach, a patio, or anywhere you can successfully ignore your to-do list

One More Drift Before Sunset

  • Not everything needs to be scheduled.
  • Not every minute needs to be productive.
  • And not every margarita needs to knock you over the head with complexity.
